In 1982, San Francisco, CA, Leigh Truex found a family recipe for kosher dill pickles that was more than 100 years old. The recipe called for a natural fermentation process that transforms cucumbers into pickles without adding vinegar, creating a zesty dill pickle in a cloudy brine that was unlike anything on shelves at local grocery stores.

Leigh decided to sell her pickles at local farmers markets around the Bay Area, calling her company Bubbies, the Yiddish word for grandmother. Bubbies products were an immediate hit, word spread quickly, and people from all over Northern California flocked to try these one of a kind fermented Kosher Dill Pickles.
