- Total Time: 1 hour, 10 minutes
- Yield: 18 mini donuts
- Dietary Notes: AIP, Paleo, Gluten-Free, Grain-Free, Dairy-Free, Egg-Free
Ingredients
For the Donuts
- ½ cup coconut milk
- ½ cup pumpkin purée
- ¼ cup maple syrup
- ¼ cup coconut oil, melted
- 1 tsp vanilla
- ¾ cup tigernut flour
- ½ cup coconut flour
- 1 tsp baking soda
- 2 tsp cinnamon
- ½ tsp ginger
- ¼ tsp mace
- ¼ tsp cloves
- ⅛ tsp salt
- ¼ cup water
- 1 Tbsp unflavored gelatin
For the Pumpkin Spice Glaze
- 2 Tbsp coconut butter
- 2 Tbsp maple syrup or honey
- 1 Tbsp coconut oil, melted
- ¼ tsp vanilla
- ⅛ tsp each cloves, mace, and ginger
- ¼ tsp cinnamon
Instructions
Make the Donuts
- Preheat your oven to 350°F and lightly coat a mini donut pan with coconut oil.
- Whisk together the coconut milk, pumpkin purée, maple syrup, melted coconut oil, and vanilla in a large bowl.
- In another bowl, combine the tigernut flour, coconut flour, baking soda, cinnamon, ginger, mace, cloves, and salt.
- Add the dry mixture to the wet ingredients and stir until combined.
- To prepare the gelatin egg, pour the water into a small saucepan and sprinkle the gelatin evenly over the surface. Let it bloom for 2 minutes, then warm over medium-low heat and whisk until frothy.
- Immediately mix the gelatin egg into the donut batter.
- Fill each donut cavity about three-quarters full and bake for approximately 20 minutes.
- Leave the donuts in the pan for 10 minutes before transferring them to a cooling rack. Allow them to cool completely before glazing.
Make the Glaze
- Gently warm the coconut butter and coconut oil together until softened.
- Remove from the heat and mix in the maple syrup or honey, vanilla, and spices until smooth. If needed, add a little more coconut oil to thin the glaze.
- Dip each cooled donut into the glaze, letting the excess drip off.
- Set the donuts on a rack for 10 minutes, then refrigerate for 20–30 minutes to allow the glaze to firm up.
Dietary Notes
AIP Elimination-Friendly: Made without eggs, dairy, grains, or traditional wheat flour. Tigernut flour and a gelatin egg make these donuts suitable for the elimination phase of the Autoimmune Protocol when using compliant ingredients.
Paleo & Gluten-Free: These mini donuts use tigernut and coconut flours in place of conventional flour. They're naturally grain-free and gluten-free, though it's always important to check individual ingredient labels.
Dairy-Free & Egg-Free: Coconut milk and coconut oil replace dairy ingredients, while gelatin serves as an alternative to eggs.
Not Vegan: The recipe contains animal-derived gelatin (and may contain honey if chosen for the glaze).
A Few Helpful Baking Tips
- Use plain pumpkin purée, not pumpkin pie filling, which contains added ingredients.
- Let the donuts cool completely before glazing to help them hold their shape.
- Don't skip the glaze! It's optional, but adds another delicious layer of pumpkin spice flavor.
- Store leftovers in a covered glass container in the refrigerator for up to 3–4 days.
